I didn't have much for lunch so thought i experiment as this recipe looked nice. I kept all the main ingredients the same but left out thyme sprigs. I melted the butter in a frying pan, added one sliced leek, cooked till almost soft. Added 3 slices of smoked bacon which i chopped in and cooked till almost done. Then added 4 chopped chestnut mushrooms and cooked till all soft and bacon cooked. Stirred in breadcrumbs (i had some in freezer pre made) added some blue cheese but any cheese would be fine. Cooked till melted and everything cooked through. Then put in a bowel (it made Knuth for 2) made a nice lunch, so thought i share.

Quick and delicious. I tried it as a side dish with a piece of grilled steak and it was very good.
