  1. Heat the oil in a large non-stick frying pan. Add the leeks and 2 tbsp water, and cook for about 10 mins until very soft. Add the bacon, turn up the heat and fry until cooked.

  2. Meanwhile, cook the pasta following pack instructions. Drain and reserve a mug of the cooking water.

  3. Spoon cheese into the leek and bacon mix, adding some of the reserved cooking water. Season and stir gently over a low heat until melted. Toss through the cooked pasta, adding a little more cooking water, if needed, to help the sauce coat the pasta.

Fab recipe! I wanted a slightly healthier version so I boiled the leeks with the pasta and grilled the bacon and used a low fat soft cheese. Still delicious (probably not as good as the fried version, it never is!)

Boyfriend said "it's really, really nice" and rates it 10/10. He a picky eater so new recipes are always a risk. The pets (not so fussy eaters) have been trying to steal some for themselves! Will cook this again sometime. Thanks!

Just cooked this for my very fussy 4yr old & he's loving it! I used roule instead of Boursin because it's half the price & it tastes lovely. Nice quick recipe for times when you don't want to spend ages in the kitchen. Definitely will be making this again :-)

i grilled the bacon first and made my own cheese sauce instead of using bousin , it was an absolute hit , all clean plates this is definately now a firm family favourite
