Exotic Mushroom Fritters

Ingredients
- 100g Eryngii
- 100g Shiitake
- 100g Maitake
- 150g Self Raising Flour
- 240ml Milk
- 2 Eggs
- 1 Bunch Chives
- 10g Parsley
- 2tbsp Olive Oil
Salt & Pepper (for seasoning)

Method
- STEP 1Heat the olive oil in a pan and fry the chopped mushrooms for 4 minutes until they are soft
- STEP 2Combine the flour, salt and pepper in a bowl together
- STEP 3Whisk the eggs and milk together in a separate bowl and then add to the flour, salt and pepper then mix well
- STEP 4Add the mushrooms, chives and parsley to the mixture
- STEP 5Add enough oil to a non stick frying pan to cover the base, when hot drop a tablespoon of mixture into the pan and cook for 3 minutes either side until brown then drain and serve with a tzatziki dip
