Method

  1. Heat the oil in a large saucepan. Cook the garlic for a few seconds, then add the courgettes and cook for 3 mins until they start to soften. Stir in the peas and cannellini beans, pour on the hot stock and cook for a further 3 mins.

  2. Stir the pesto through the soup with some seasoning, then ladle into bowls and serve with crusty brown bread, if you like. Or pop in a flask to take to work.

Really nice soup and so easy! I added a bit more garlic too and some plain yoghurt at the end. Will definitely make this again.

This is so simple and a beautiful dish to have coming home after a busy day at work.The beans act as a protein source and yet rich in starchy carbohydrate/high in fibre due to the mixture of veg. Tasty and well balanced nutritious delight. Yet not boring due to the flavour of the pesto !

Lovely. I use knorr liquid chicken stock instead of vegetable stock and like it quite strong. Kids love this too which is great as far as I'm concerned

Sorry but this is the first good food recipe I would not recommend. Followed the recipe to the letter and it was tasteless so I cooked it for longer to try to let the flavours infuse - still tasteless. Had a sandwich instead.

So delicious! I wanted something quick and nutritious for my lunches and this fits the bill perfectly. I made it yesterday and it only took me 20 mins from start to finish. I've frozen 3 batches for the rest of the week and I'm really looking forward to having it again!

Great way of using up courgettes, so fast and very tasty. I was surprised to be honest! Next time I'll try with more garlic, and add some spring onions at the very end.
