Method

  1. Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.

  2. In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.

a very delicious summery recipe! i used panko bread crumbs too which are easily available in the shops (mine from morrisons). the tomatoes are a perfect addition too, juicy and sweet smelling YUM!

Very good, made with unsmoked haddock, crunchy topping was lovely. We had with boiled potatoes and broccoli so a very healthy meal. The tomatoes gave it a tangy sweet taste. Will definitley be making again.

Tried this for the first time tonight and it was very well received by all. Would work with cod too as similar texture to haddock. We loved the added ingredients which enhanced but not masked the lovely flavour of the haddock. Also the crunchiness of the breadcrumb topping was really good. I have been looking for a light and healthy alternative to battered fish and am bored with egg & breadcrumbs, so will be using this recipe from now on. So simple and very quick to prepare too.

I made this last night with unsmoked haddock. A delicious, simple and light fish recipe for the summer. I followed the recipe exactly though it's fairly easy to adapt to your own tastes. I served the fish with a jacket potato and salad which went perfectly. I'll be adding this to my favourites.

The fish was cooked beautifully, and had a real melt in the mouth texture. The combination of the garlic mayonnaise and breadcrumbs worked perfectly, and the tomatoes added that extra bit of moisture and tang. Served with some extra steamed veg, will certainly be making this again.

Very simple and tasty meal, will definitely make again! Worked very well with Panko Japanese breadcrumbs which made it very light. Great for a fuss free mid-week dinner. Definitely recommend!

Forgot to mention that I added some mozzarella cheese in with the breadcrumbs and topped a few pieces of fish with it. I prefer no cheese, but those who ate the cheesy fish liked it.
