  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.

  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

Made this when my boyfriend presented me with a huge bag of courgettes from the allotment. Absolutely delicious - mega brownie points! my only addition was a couple of pinches of chilli flakes. Spiced it up just a touch.

This is really delicious, thick and warming and really easy to make. I didn't have any spring onions and used a finely diced red onion instead. It's not bland at all but it does need a really STRONG cheddar and a GENEROUS grating of nutmeg. It's a great recipe for 'allotmenteers' to have in their binder as it is a good way to use up excess courgettes and new potatoes.

Brilliant easy soup - I did not have spring onions so used shallots and added a handful of garden peas to deepen the colour, I also seived it, as I only had quite large round courgettes - made a beautiful smooth elegant soup - considering the number of courgettes growing in my garden I expect to have a freezer full of this soup by the end of the summer!!!!!!!!!!!!

Lovely soup! and very straightforward to make. My only advice would be to go easy on the nutmeg as it can overshadow the courgette. Will definitely make again many times more!

Halved recipe, but didn't quite have enough courgette so added carrot to make up the weight. Also added a couple of cloves of garlic and a small piece of ginger with the onion to add a bit of heat. Tasted delicious, a great standby recipe :)

Used the quantities (1kg Courgettes, 500g potatoes) but gently sauteed an onion in butter, added the courgettes and potatoes and a crished clove of garlic, softened for a while then covered with homemade chicken stock. Waited til the potatoes were cooked then added a couple of handfulls of frozen peas, brought back to boil then whizzed it all up and seasoned with lots of black pepper and a little salt. Lovely ! And as my polytunnel is in 'courgette overdrive' a great way to use up 1kg of courgettes :)

What a pleasant surprise!
I was given "cucumber" seeds by a friend and they have morphed into courgettes of which I am not fond. Decided to give this recipe a whirl and am very pleasantly surprised! Very fresh tasting and with underlying cheese and nutmeg it makes an interesting flavour.

Delightful. Didn't take long at all to prepare. Scaled the recipe down to 2 portions (one for now, one for the freezer), used onion instead of spring onion and bunged in a handful of spinach with the cheese as it needed using up. Needed a heavy hand with seasoning even with the cheese but would make this again for an easy lunch or starter.

This soup is sooooo tasty. In fact I think its the best soup I have ever tasted! its such a quick and easy recipe. You dont even have to peel the veg. Really recommend this :-)

I made this with one brown onion instead of spring onions and it worked beautifully. I scaled it down to one potato (about 350g), 3 courgettes (about 530g) and one onion, keeping the two stock cubes and used 60g of extra mature cheddar- absolutely delicious.

I love making this soup when we have a glut of courgettes and normally add about 500g of frozen peas which gives it a bit more texture and flavour. Minted ones are especially good.
