Method

  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.

  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

Delicious, quick, easy and healthy! I used sweet potato (instead of potato). I did not have stock cubes, so I used 2 teaspoons of vegetable stock (next time I will use only one teaspoon) and I used feta (instead of cheddar). I gave some to my sceptical neighbour. She loved it!

Absolutely scrumptious! I've just started the 5:2 diet and will definitely be including this on my fast days - it's low in calories but filling and tastes surprisingly creamy and decadent.

surprisingly tasty, I think next time I'll use less stock as it was slightly salty but apart from that I wouldn't change a thing.

I love this soup! I don't really like strong cheddar so I just double the cheese for a stronger flavour. I've tried it with normal onions and spring onions and I have to say you do taste the difference so I would stick with spring onions in the future!

A perfect soup to freeze if you get potato and courgette gluts from an allotment. It's quick to make and absolutely delicious. I make it every year.

I made this soup today and if I say so myself it was absolutely gorgeous. We have a massive glut of courgettes so I will be making more and freezing it. I forgot to buy spring onions so I substituted a finely chopped red onion instead and it worked very well, We don't care too much for nutmeg so I used black and white pepper and salt for seasoning. I'm not very good in the kitchen normally but this recipe is so easy, quick and tasty it will be a family favourite I'm sure. I have also made the Creamy Courgette Lasagne from this web site and that is lovely too.

I make this for my 2.5 year old who loves it and has it for lunch once or twice a week. I freeze it in small portions for him and it repeats perfectly. As I make it for him, I don't add salt and I use Kallo very low salt chicken stock cubes. I also add cumin with the nutmeg and black pepper. I'm currently weaning my nearly 8 month old and I've just started to let her have this too; it's great to have recipes I can use for both of them!

Delicious. It looked pretty ropey whilst it was cooking, but was surprisingly tasty. A good way to use up some old veg. Would 100% recommend.

I've had better soups, but this is nice and creamy, and helps to use up courgettes! I added some creme fraiche to mine, which went down nicely!

This is a great recipe, and loved by all the family. I can, however, understand the claims that it is bland, and I think this depends a lot on the type of cheese you use. A more mature cheddar is saltier, and this will improve the flavour - but the other thing you can do, of course, is to use a proper stock, chicken or game, or something with more flavour than veg stock. A really good way to use up that glut, so don't give up on it!
