Method

  1. Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.

  2. In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.

  3. Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack, then pack in a container for lunch.

Very nice muffins. I did not put sultanas but 4 apples instead of 2 . Light and fluffy muffins. My 4 year old ate 2 in one sitting and he is extremely fussy eater. This one is a keeper.

Muffins turned out great, although I used soft brown sugar in place of the caster sugar, and used oat flour in place of the wholemeal. Delicious warm out the oven with a drizzle of honey.

My friends and family love this recipe, we use a tiny bit more Apple that listed and wholemeal spelt flour instead of just wholemeal. For an extra treat it's yummy with some homemade apple sauce squirted in the middle.

Really like this recipe (although I did use a small (150g) pot of natural yoghurt instead of the milk). It made moist and fluffy Muffin perfect for a breakfast on the go or a packed lunch. I think it's worth mentioning (as its not mentioned in the recipe) that Muffin batter shouldn't be over-mixed, just enough that everything is incorporated. I used 2 big Braeburn apples in this and the Muffins were gorgeous! I've also adapted the recipe to make Raspberry & White Chocolate Muffins by leaving out the cinnamon and increasing the golden caster sugar to 125g, then adding 100g of frozen raspberries, defrosted, and coated in a little flour so that they dont sink when cooked, and 100g White Choc in place of the apple and sultanas.

Very good recipe. Good consistency, not dry or gooey. I did not have a wholemeal flour, so I added flax seeds instead, which is even healthier. I also used soft brown sugar and soy milk instead of semi-skimmed. | added chopped hazelnuts and topped them with pumpkin seeds as a decoration. Will make again.

I made these using natural plain yogurt instead of milk and I skipped the sultanas as my kids are not fond of them. The result was an amazingly soft texture. I would definitely be doing them again and I would recommend others to try them out!

I had no wholemeal flour so substituted it with a porridge mix of oats, oat bran and wheat bran. I also sprinkled Demerara sugar on the top :-) I made 24 mini muffins and 6 cupcake sized ones. Really lovely muffins that come out of the case cleanly too (so many muffins don't!) and really simple to make.
