  • 1 Whole Egg
  • 1 Egg Yolk
  • 30g Caster Sugar (Vanilla Sugar also works very well)
  • Vanilla Essence (Just a dash, use less if you use Vanilla Sugar)
  • 50g Dark Orange Chocolate (I use Green & Blacks Mayan Gold Chocolate)
  • 37g Unsalted Butter (Plus extra for greasing moulds)
  • 15g Plain Flour
  • 1/4tsp Ground Cinnamon (Plus extra for dusting moulds)
  • 1/4tsp Ground Nutmeg
  • 1/4tsp Groud Mixed Spice


    1. Preheat an oven to 175C/Fan 160C/ Gas 5
    2. Brush melted butter on the inside of the moulds and refrigerate until the butter has solidified. Regrease then sprinkle the inside with cinnamon so the entire interior of the moulds is coated
    3. Combine the egg, egg yolk, sugar and vanilla in a bowl and whisk until it has at least doubled in volume
    4. Melt the chocolate and 37g of butter in a Bain Marie and fold into the egg mixture.
    5. Very gently fold in the flour and spices then fill the moulds to half way
    6. Chill for a minimum of 30 minutes then bake for 11-14 minutes. When the top form a slight crust and the corners start to pull away from the edges of the mould
    7. Allow to rest for about a minute and carefully turn out of the moulds. Serve with cream of ice cream
