  • 1 tsp vanilla extract
  • 140g caster sugar
  • 300ml pot double cream

Method

  1. Separate the eggs. Beat the yolks and and vanilla extract with an electric whisk until light and foamy. Clean the whisk, then in another bowl whisk the egg whites, gradually adding the caster sugar until it is thick and glossy, a bit like making meringues.

  2. Lightly whip the double cream until it softly holds its shape. Mix with the yolks and egg white mixture until everything is combined. Turn into a container, cover and freeze until solid. Take out of the fridge about 10 mins before serving.

Have made this several times & always get asked if I really did make it!?! Who needs an ice cream maker when you have this basic recipe. Fuss free and so so easy. I always add in whatever I have left in the cupboard, from fudge pieces, honeycomb, maltesers to choc chips. Anything goes really.

Was seriously thinking of buying an ice-cream maker until did this fab recipe, so easy and tasty which could easily be adapted to incorporate various different flavours. What a triumph!

Yum. Added some roasted strawberries before I put it in the freezer. I served with the juice left over from the strawberries and some homemade shortbread.

Brilliant recipe and great ice-cream! Unbelievably easy I made it with my 2 small children. Makes very tasty ice-cream - which didn't last long in the freezer!

Easy and veryv tasty. I added some mashed raspberries I had in my freezer and it tasted great. Next time I'll add vanilla seeds instead of the extract, since I felt the vanilla extract taste a little over powering. Adding less extract may also be an idea if I don't have a vanilla pod handy. This recipe will also be a great base for adding other tastesvthan vanilla.
