Ingredients

  • 4 chicken breasts - skin on
  • 50g chorizo sausage, skinned and cut into chunks
  • 1 large onion - chopped
  • 200g basmati rice
  • 500ml chicken stock
  • 400g can kidney beans
  • few thyme sprigs or 1/2 tsp dried thyme
  • handful of green olives

Method

    1. Heat a frying pan, then dry fry the chicken, skin side down for 8 minutes, turning half way through. Pour off excess fat
    2. Tip in the chorizo and fry for a minute. Remove chicken and chorizo, then add the onion and fry for 3 minutes
    3. Add the rice, stir together with the onions, then return the chicken and the chorizo. Pour in the stock and add remaining ingredients, season
    4. Cover and cook on a medium heat for 10 minutes, until the chicken is cooked and the rice fluffy
