Method

  1. Tear the bread into a large mixing bowl and add the fruit, peel and spice. Pour in the milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread. Add eggs, muscovado and lemon zest if using. Stir well, then set aside for 15 mins to soak.

  2. Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base). Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara. Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

Fantastic Recipe. Made this yesterday. My mum always made a great bread pudding. Never knew the recipe she used. Saw this site, thought right I am going to make one. Well my husband had 4 pieces of Bread pudding ( normally he would not like Bread Pudding). Our daughter has some, and I must say it turned out and tasted beauitful

Brilliant recipe. Left out the peel, but for us it had no bearing on the quality of the pudding. Thoroughly enjoyed it. Extremely moorish. Just like mum used to make.

Great recipe, easy to follow and turns out as close to my mums bread pudding as I remember back in the day! I add a sprinkle of nutmeg on top before it goes in to the oven, for that added authenticity then sprinkle with light brown sugar as soon as it comes out the oven. Delicious hot, cold, on it's own or with custard or vanilla ice cream.

This is a wonderful recipe, my elderly mother and neighbours say it's just like the one that thier mothers used to make! I also add a handful of chopped walnuts which give an extra dimension and always goes down well. If I had a deli I would be making this and it would be flying out the door!!

Fab pudding. Take the time to squish this through your fingers when mixing. First I used a knife to really break up all the bread crusts with just the milk and spice, then added the fruit and squished it for about two minutes. Got rid of all the lumps of bread and then a good soaking for about half an hour. Came out of the oven really nice.

I had to re-jig the recipe a bit, no peel, 1 egg, and some single cream to make up the milk quantity, and no lemon, but it turned out a dream, and will definitely make it again and again

Great bread pudding recipe. We have tried several before this making this one. This far the best recipe for bread pudding we have discovered, everyone who tries it falls in love with it and asks for the recipe.

I have been looking for a recipe for bread pudding for so long, I was brought up on it, in a time when bread had no preservatives and would be stale very fast , my Mum scalded the bread in boiling water first, we ate it hot with custard but just fab cold too.

My Nan used to make the best bread pudding EVER! Sadly, I never got the recipe off her before she passed away. I've spent the last 30 years trying every recipe imaginable and I've bought bread pudding from every possible outlet. None could touch my Nan's delight. Until now!! This recipe is spot on! I stumbled across it a few of weeks ago - and am making it for the 5th time today! I never have enough leftover bread - so buy bread especially - and I find the supermarket 'value' loaves do just as good a job as any other.
