Method

  1. Dry-fry the sausage meat in a non-stick pan for 8-10 mins until browned, breaking it up with a wooden spoon, then remove and set aside. Fry bacon and mushrooms for 5-8 mins until golden, return the sausage meat and keep warm.

  2. Cook the pasta following pack instructions. Make the sauce by beating together the Parmesan, egg yolks, most of the parsley and the crème fraîche. When the pasta is cooked, drain, reserving a ladle of the cooking water.

  3. Combine the pasta and meat mixture over a low heat and add the sauce. Season and quickly mix, adding a splash of cooking water if it’s a little thick. Spoon into bowls and eat with the extra Parmesan shavings and remaining parsley on top.

Lactose free here so used unsweetened soya milk and lacto-free cheese instead of the dairy counterparts in the sauce. Also didn't use bacon as thought it would be too salty for my toddler - replaced with onion, courgette and peppers to up the veggie content. Pleased with the creamy sauce instead of the usual tomato. Also only had three sausages and it was fine! Yum.

This was okay, but I found it a bit bland - too claggy with not much other flavour. Maybe won't be making again.

Lovely! The only reason I didn't give it 5 stars was because I would increase the 'sauce' to pasta ratio next time. It was very straightforward to make gluten-free - an extra bonus!

Very easy to make and resulted in clean plates and full tummies all round. Not the healthiest but nice to have now and again.

Excellent midweek mea, tasty ad substantial. I substituted the bacon with turkey bacon and the creme fraise with goats yoghurt and the parmesan with a hard goats cheese and I used chicken sausages because my husband has a specia diet. It was very tasty!!!
