  • 85g glacé cherries, halved


  1. Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray with baking parchment. In a large bowl, mix the desiccated coconut, sugar, eggs, white chocolate and glacé cherries until combined. Cook for 20 mins until golden brown and set, then cool in the tin before slicing into bars.

This is lovely and so easy. I was a bit worried with the mixing as it didn't look promising but it held together really well. Also made it using dried pineapple and white chocolate which was very good too.

After having a really busy weekend, I suddenly remembered I had promised to bake something for a charity cake sale at work tomorrow, and these have totally saved the day!!! I have just made two trays of these lovelies - one using white chocolate, and one with dark. I also ran out of coconut, so ground up some walnuts to make up the measurements. They are delicious and I will certainly recommend them and make them again in the future. Such very simple, but lovely ingredients, and really took next to no time to make. I am sure they will sell well tomorrow!

Made this again as so yummy. Did not have the full amount of glace cherries in the cupboard, so topped up with mixed peel left over from Christmas cake. A lovely addition to an easy recipe.

Tried this for the first time today as had visitors and wanted something quick and easy. Used white and milk chocolate and it is delicious. Will definitely be a favourite from now on. Highly recommended.
