Method

  1. Tip the tomatoes into a large microwavable bowl. Fill the empty can with rice and tip it into the bowl, then fill the can with water and pour it in. Stir in the pepper, chorizo, sweetcorn, Cajun seasoning and some salt and pepper to season.

  2. Cover the bowl with cling film and pierce a couple of holes in it with a knife. Microwave the rice for 10 minutes at 750W. Tear off the cling film and give everything a really good stir, then return the uncovered bowl to the microwave for another 12-15 minutes until the rice is done.

  3. Take the bowl out of the microwave, cover it with a plate and leave to stand for 5 minutes before stirring in the parsley, if you are using it. Serve the jambalaya straight from the bowl, with the soured cream to spoon over it.

Firm favorite. I like to add a generous sprinkle of paprika and only heat the peppers for 10 minutes cause otherwise the become lifeless. And I don't heat the corn at all, simply stir it in at the end. The sausage I heat through separately to make it crisp and then stir it in with corn. Absolutely lovely:)

very very tastey and so easy to do. Have cooked it twice now, second time with cajiun pre flavoured roasted chicken, mushrooms, peas and ramiro pepper. Have already passed the recipe on.

Fabulous! Replaced one chorizo with a skinned chicken breast. My husband loved it and he's not keen on rice dishes.

Fantastic taste, however didn't use the meat added some extra peppers and it was delicious and the Artichoke and Lemon Salad was a perfect compliment to this dish.

Love this one, really easy to prepare and cooks itself. Have never cooked a whole meal like this in the microwave but was really impressed.
