Indulgent no bake chocolate snacks containing marshmallow and digestive biscuits.

  • 200g Dark Chocolate (70% cocoa solids works best)
  • 2-3 tbsp Golden Syrup
  • 135g Butter or Margarine
  • 100g Mini Marshmallows (chopped regular marshmallows work too)
  • 200g Digestive biscuits (rich tea can also be used)
  • Icing sugar to dust
  • Optional Ingredients
  • Raisins, dried cranberries or any dried fruit
  • Nuts
  • Anything else you think would be tasty
  • Please share any additional ingredients you included or things you did differently. Remember if using additional ingredients to change the amount of biscuit and marshmallow accordingly so as to have enough mixture to cover them.


    1. Line a small to medium sized square baking tray with baking paper.
    2. Place biscuits into a freezer bag and bash with a rolling pin or just the side of your fist until they're broken into a mixture of everything between dust and 50p size lumps. Put this to one side.
    3. In a large sauce pan melt the butter, chocolate and golden syrup over a gentle heat stiring it constantly until there are no or almost no more lumps of chocolate visible, then remove from the heat.
    4. Take Biscuits, marshmallows and any additional delicious ingredients and pour into the pan of the chocolate mixture. Stir all this into the mixture until everything is completely covered.
    5. Tip the mixture into the lined baking tray, making sure you get it all, and spread the mixture out to the corners.
    6. Refrigerate this for at least 2 hours then dust with icing sugar and cut into fingers of sizes you deem necessary.

Really delicious and easy to make - 6 year old made it with help from 10 year old. We added chopped apricots and dried cherries to ours.

great recipe, used less golden syrup and added roasted cashews and topped with roasted sesame seeds rather than icing sugar, considering adding pine nuts next time, thanks again for the recipe

Love this recipe, tastes great. One problem though: when I put the mixture into the tin there was loads of butter around the side and on the top, had to use a paper towel to soak up the extra butter, did anyone else have this problem?

Fantastic easy recipe for a Rocky Road you can't go wrong with. My little boy has made these to sell to raise funds for his cubs group, adding popcorn to the next batch.

I made a 'grown up' rocky Road with amaretti biscuits and grace cherries (and marshmallows obviously)

i love this recipe, it makes the best rocky roads ever! i added dried cranberries and chopped pecans to mine and dusted them well with snowy icing sugar. yummy!

Love this recipe, used malted milk biscuits, as didn't have any rich tea or digestives, with marshmallows and little sprinkles! Only one problem, I put the mixture into the tin and there was loads of butter on the top and around the sides, I used the right amount of butter like the recipie said, did anyone else have this problem?

I love this recipe and make them regularly. For Christmas I added some cranberries, pecans, 1 orange juice and zest. Covered with loads of snowy icing sugar and edible silver glitter. Sooo christmassy :)

Iuse 300g dark chocolate but the real secret is forget the biscuits (crunchie`s are the real rocks in the road)
