  • 4 large vine tomatoes, cut into irregular wedges
  • 1 cucumber, peeled, deseeded, then roughly chopped
  • ½ a red onion, thinly sliced
  • 16 Kalamata olives

Method

  1. Place 4 large vine tomatoes, cut into wedges, 1 peeled, deseeded and chopped cucumber, ½ a thinly sliced red onion, 16 Kalamata olives, 1 tsp dried oregano, 85g feta cheese chunks and 4 tbsp Greek extra virgin olive oil in a large bowl.

  2. Lightly season, then serve with crusty bread to mop up all of the juices.

Delicious!!! I have to thank Frogma for the advice with the onion, I left the slices of onion in a bit of lemon juice while preparing the rest of the salad, at the end I added the onion with the lemon juice to the salad and it worked excellent. I changed the amount of ingredients 3 large tomatoes and 2 cucumbers. My family love it THANKS!!!

making tonight for me and my partner. Absolutely love Greek salads and a little tip it tastes fantastic with a small splash of balsamic vinegar and a squeeze of lemon!

Made this last night to go along side bbq with friends. I had made it earlier in the day and covered with clingflim the smell when taking the cling film off was absolutely gorgeous - sent us all to the med! The taste too was fantastic and I for one will be using it again and again.

Very tasty. Had with pitta bread and meatballs. Omitted the olives and added a aqueeze of lemon....Delicious!!
