Ingredients

  • 85g low-fat biscuit (we used WeightWatchers ginger biscuits)
  • 200g tub extra-light soft cheese
  • 200g tub 0% fat Greek yogurt
  • 4 tbsp caster sugar
  • few drops vanilla extract
  • 2 tbsp good-quality strawberry jam
  • 100g strawberry, hulled and sliced

Method

  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.

  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.

  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

Just had theses for pudding my little girl loved it! Changed the sugar for 2 spoons of honey and oat biscuits instead and only a spoon of jam and was amazing defo going to be a regular pud in my house hold!

Really lovely cheesecakes perfect for competitions and the like. I would steal them off a baby. That's how nice they are.

Very nice, but if you don't have a sweet tooth then far too much sugar! I halved the amount & it was more than enough.

This is the best cheesecake ever!!! Low-fat, healthy, very delicious and easy to make. I've made a number of different cheesecakes over the years but my family and friends always ask for these cheesecake pots for desert. For myself I use crushed nuts instead of biscuits and stevia instead of sugar.

So simple, so quick, and so blooming delicious. I used a mixture of amaretti biscuits and digestives, and also went heavy on the strawberries. Would be lovely with some almonds in the base.

Delicious. The ginger biscuits are essential as they add great flavour. Don't bash them too much though as they are really good as chunky bits. I served mine in old Bonne Maman jars.
