Ingredients

  • 85g low-fat biscuit (we used WeightWatchers ginger biscuits)
  • 200g tub extra-light soft cheese
  • 200g tub 0% fat Greek yogurt
  • 4 tbsp caster sugar
  • few drops vanilla extract
  • 2 tbsp good-quality strawberry jam
  • 100g strawberry, hulled and sliced

Method

  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.

  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.

  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

This saved me last night when my pavlovas stuck to the foil! I whipped it up in minutes and they looked amazing served in martini glasses. Ok, I admit I didn't make the low fat version, instead using low fat cream cheese and whipping cream. It went down a storm though!

We love this dessert. So easy to make. I use Light Digestives for the base layer. Then have used either Greek 0 fat yoghurt or home made 0 fat strawberry yoghurt mixed with the low fat soft cheese. If using the Greek then I do add vanilla extract if using the strawberry I don't. I don't add any caster sugar at all as it is sweet enough for us all without it. For the strawberry topping I use fresh strawberries and add a dash of balsamic vinegar and a twist of black pepper. I prepare this and leave in the fridge until just before serving then add the jam to the strawberry mix and top off the dessert.

Used amaretti biscuits instead of ginger nuts and mascarpone instead of soft cheese; not exactly low fat but tasted nice.

These are absolutely delicious and so easy. I added some grated lemon zest to the yoghurt, cream cheese mix - lovely. Will definetly make these again!

Gorgeous !!! I doubled up the ingrediants and put in a tin and took it to work and it was demolished in no time !!!

Made this cheese cake for my partner and I on valentines day. We both loved it. My partner wiped the bowl clean. Very easy to make, used light digestives for the base and weight watchers jam for the topping. Still quite a calorific pudding but fat wise it's great. Will make again as a healthy treat. I may try it with less sugar next time or sweetener to cut the calories more.

I find 'low fat' recipes very interesting. Did you know that it is excess SUGAR which turns into body fat...not saturated fat. Also, polyunsaturated fat (veg oils) are burnt slower by the body, and too can become body fat. In fact the body has so much use for saturated fat (butter/lard/coconut oil) that you can rarely eat too much. For more info visit: www.thenourishingroad.co.uk

Very very quick to make and went down a treat. I substituted the strawberrys for frozen mixed berries which i defrosted in advance, and mixed with raspberry jam. Will definitely be making these again!
