  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Delicous, I made this for my mum when she was out running and she was thrilled to come home and see this on the table, it is easy and very tasty! However, when the rice was cooking I kept adding more water and more stock because there was not enough as the rice had absorbed it and it had evaporated.

I did 1/3 recipe quantities for everything except the bacon for which used up a cheap pack of 12 rashers -not surprisingly it was rather salty! Still very palatable though.

I didn't have risotto rice so had to use ordinary rice which perhaps didn't work quite as well as it should. However, it was still tasty and really quick and cheap to make. Not one for a dinner party but a good budget busting mid-week meal.

I have never made risotto before, thinking it was difficult and time consuming, but this was SO simple and delicious.... it has became a favourite meal in our house and I am adding more ingredients every time.
