Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

First time risotto maker and it was easy to do but perhaps next time will use smoked bacon for extra flavor but it was yum!!

I can't remember if I have rated this one before, but it's really very good, served for lunch with a green leaf salad. Guests asked for seconds. Very tasty and very easy.

Absolutely love this one in our house! Uses basic store-cupboard ingredients to make a very tasty risotto. We mix in some grated parmesan just before taking it off the heat.

Delicous, I made this for my mum when she was out running and she was thrilled to come home and see this on the table, it is easy and very tasty! However, when the rice was cooking I kept adding more water and more stock because there was not enough as the rice had absorbed it and it had evaporated.
