Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Added garlic with the onion. Really nice n easy - no watching & stirring as u add ladle of stock! Could use with various other ingredients. Will def b making again

Absolutely delicious - I didn't use the full amount of rice suggested. Risotto is very filling so everyone was quite full and content. Easy to whip up. I used chicken stock instead of vegetable stock as I thought it would add more flavor.

Really love this, so easy and tasty although I use ham stock and add thin sliced pepperoni too for extra flavour. Yummy!

We have this often, usually with roast chicken. Not got the texture of a stand-and-stir risotto but tasty and so easy. Perfect for a midweek dinner.

This is now a regular dish in our household. It's simple ingredients, easy to make (even the hubby can make it) and nice and tasty. We also add a little garlic :)

I made this tonight, I took on board the previous comments and added 2 cloves of crushed garlic when cooking off the onion and then some chopped spring onion added with the peas. I would definitely make this again and probably add some more vegetables like leeks etc as suggested below.

I don't use risotto rice i use orzo which is a pasta rice its lovely have been using it for ages after hearing about it from nigella which is the same recipe.

Delicious - added a bit of garlic but otherwise followed recipe exactly, and extremely easy to make.
