Method

  1. In a small non-stick frying pan, heat oil over a medium heat. Add potatoes, then fry until beginning to crisp, about 8 mins. In a bowl, whisk together eggs, spring onions, dill and some seasoning. Heat the grill.

  2. Tip the eggs into frying pan, mix quickly, lower the heat, then sprinkle over cheese. After about 8 mins, once the top side has almost set, pop under the grill for 2-3 mins or until firm and golden. Slide out of the pan. Eat straight away with mayo or ketchup or cool quickly and chill.

This is delicious, and so easy to cook! A perfect quick tea on nights when you really can't be bothered. We had it with a big salad and a wholegrain mustard dressing :)

Extremely easy to cook. Versatile to adding extra or swapping some of the ingredients. Flavours can be kept simple or extra added to suit. Kept it simple this time. My husband loved it and had HP Sauce with his. I had rocket and chilli jam.

This will be a regular spring/summer supper for us, it was delish! I made a couple of adjustments of using sweet potatoes boiled in chicken stock & also added a few chilli flakes, and of course added extra cheese than is stated, as you just can't have too much in my opinion!!

This is my favourite frittata to make. Other recipes have come out over-done and rubbery or under-cooked and runny in the middle, but for some mysterious reason this one comes out perfect every single time. Love the dill and usually add lots. 3 regular potatoes and 6 eggs fills up my larger frying pan nicely and makes a good amount to share at picnics.

Makes a tasty fritatta, husband awarded it four stars because he says there was too much dill, although personally I enjoyed this aspect. To be made again!

I added some bacon to the mixture along with some regular onions as I didnt have spring and it was really nice and filling, I'm gunna add a dash of paprika to the egg next time for a bit more flavour, I had my slices with some salad and coleslaw and the other half had his with brown sauce and both went very well together, nice and easy and handy if you have some left over odds that your not sure what to do with.

This was really really good. I halved the eggs and the potatoes as I was making half of the portion but the rest used just as written. Besides I used dried dill as I had no fresh (about 1tsp, could add 2 easily). It came out so good that I ate it all at once rather than leaving half to cool down and have the next day. I liked it hot and without the ketchup as it was killing the spring onions taste that I like so much. I'll be making this again and again, it's simple, quick and tasty. Thanks so much for the recipe!

I added way more cheese than the one listed on the recipe, as well as some sliced polish sausage. Definitely much better if served cold, plus, once out of the oven it didn't look anything close to the picture.
