Method

  1. Make the sweet & sour sauce by whisking together the pineapple juice, tomato ketchup, malt vinegar and cornflour. There should be 300ml – add water or stock if you’re short.

  2. Heat the oil in a frying pan or wok over a high heat. Add the onion, chilli, peppers, carrots and chicken and stir-fry for 3-5 mins until the vegetables are starting to soften and the chicken is almost cooked.

  3. Add the corn and sauce. Bubble for 2 mins, add tomatoes and cook for 2 mins until the sauce thickens, the chicken is cooked and the vegetables are tender. Serve with rice, if you like.

This is really delicious, I added pineapple at the end and halved cherry tomatoes. Served with noodles.

That sounds like a great idea! I didn't think this recipe could get any better, but I think you just achieved it! No guess you really are a 'foodie'!

Too much ketchup. Tips 1) Use a tblsp LESS ketchup and a touch more pineapple juice. Add a tsp of light soy sauce and 1tsp of caster sugar as well as the base ingredients. It will taste a bit weird until you cook it. 2) Add some chopped ginger, a few chilli flakes and garlic to the stir fried veg 3) Crucial - use toasted sesame oil instead of vegetable oil 4) Add some of the pineapple chunks at the end You'll find these turn a pretty bland and over ketchup'ed recipe into something really quite nice and much more like the sweet and sour sauce you know.

Very easy to make. It needed a bit more flavour but I had to substitute the pineapple juice for apple juice which might have made the difference.

Quite enjoyable dish, although as some people said above - it's missing 'a kick'. Great combination of veggies but you have to experiment more with spices. And I had to add some more water, as suggested 300mL of sweet&sour sauce was not enough

Nice enough dish but I agree with above it is lacking something - a good punch of ginger might do it, i added a clove of garlic but maybe 2 might be better. I did enjoy all the veg and really good way to make some chicken go further. I also chucked the pinapple in at the end

I threw the pineapple chunks in at the end. I used some crushed chilli in the sauce instead of the fresh, and some garlic and ginger. Everyone enjoyed it.
