  • ½ tsp each ground cumin, paprika and ground coriander
  • 1 red, 1 orange and 1 green pepper, cut into chunks
  • 1 garlic clove, sliced
  • 150ml vegetable stock
  • 250g cherry tomatoes
  • handful coriander leaves, roughly chopped

Method

  1. Heat the oil in a large, heavy-based frying pan. Cook the lamb and shallots over a high heat for 2-3 mins until golden. Add the courgettes and stir-fry for 3-4 mins until beginning to soften.

  2. Add the spices and toss well, then add the peppers and garlic. Reduce the heat and cook over a moderate heat for 4-5 mins until they start to soften.

  3. Pour in the stock and stir to coat. Add the tomatoes, season, then cover with a lid and simmer for 15 mins, stirring occasionally until the veg are tender. Stir through the coriander to serve.

My husband is on a low fat, low carb, low sugar diet and this recipe really fit the bill! Added bonus we all thought it was delicious! I left out the tomatoes and doubled the spices. Thanks GF

Have made this excellent recipe yet again. By now brimming with confidence, I decided to experiment with diced sweet potato added to the mix. Sadly this addition actually diminished and altered the final outcome from the tasty meal it is. So, my advice is...do not add sweet potato to this recipe, stick close to the original and you will not go far wrong.

Very very tasty! Doubled up on all the spices and had to thicken the sauce at the end with some cornflour, also used lean lamb steaks as could not get fillet. Served with rice. Would defiantly recommend.

Oh my goodness! ... I'd rate this higher if I could! Easy, quick, and absolutely delicious. I'd eat it every night if I could. This served 3 of us (2 adults and a 17-y-o) with good substantial portions. Only difference I made was to add a tin of cherry tomatoes instead of fresh ones as I'd run out of fresh, and to add slightly more of each spice. Served with a Couscous recipe (that was listed as part of another meal), which I tweaked and was also really yummy.

Have just made this again. I cant believe it has been 2 yrs since I first made it. I doubled the amount of lean lamb, used diced carrot in place of courgettes and included roast tomato paste. I served it with giant Mediteranian Couscous. It was fantastic, great colours and full of flavour. Just a note though. If there is any stock left in the pan DO NOT THROW IT AWAY. Use as Chefs treat, wonderful.

Lovely - I doubled the amount of spices listed, and also added chopped coriander stalks with the peppers to add a bit more flavour. I used lamb neck fillet so cooked for a bit longer. Really tasty for such a low cal dish.

I used harissa spice rather than the individual spices recommended in the recipe and added a tin of chopped toms towards the end of cooking. I also used somewhere closer to 350g of lamb and a touch more stock. Will cook again, nice simple recipe with plenty of flavour.

Needs more spices because it was fairly bland. Partly my own fault for not using better quality lamb

Can I substitute the lamb for a different meat? Lamb isn't available where I live..

Thanks for your question. We haven't tested this recipe with a different type of meat so can't give a guarantee of results. Lamb does offer a distinctive taste but you could try substituting with beef steak in the absence of lamb. Most cuts of steak only take a few minutes to cook at a high heat so we'd suggest taking the steak out after the first 2 - 3 mins and then adding it in just before serving.
