Cucumber mint salad

delicious, refreshing salad, perfect accompanyment to hot/spicy food.

  • 1 large cucumber
  • 1 lemon, juiced
  • 6 tbsp natural yoghurt
  • Mint


    1. Preferably using a speed peeler, slice up one whole cucumber. (avoiding the seeds as they tend to have little taste.) Arrange on a large platter.
    2. Squeeze on the juice of one lemon.
    3. Spoon on the natural yoghurt.
    4. Sprinkle on some chopped mint.
