Method

  1. Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking or roasting tin with baking parchment. Beat together the butter, flour, sugar, baking powder, eggs, yogurt and vanilla. Stir in the chopped cherries and snipped marshmallows. Scrape into the tin and bake for 25-35 mins until a skewer poked in comes out clean. Cool.

  2. To decorate, put the marshmallows into a pan with the milk and gently melt, stirring. Scrape into a bowl and cool, stirring occasionally, until thick enough to spread. Spread over the cake, dot over the halved cherries and slice into 15 squares.

Made this cake today, absolutely no problems with it, and it turned out fantastic. Can't see what the negative comments are about, the topping was fine and a really lovely change to boring icing or buttercream. Definitely give it a try I will absolutely be making this again, thanks for the recipe :-) xx

made it yesterday and everyone loved it!! read the comments and applied some of the suggestions..the cake turned out awesome!! However, the marshmallow I got was a bit too sweet, but definitely going to do this again!!!

Made this today, having first read all the comments. I poured the topping on when it was still pourable, which meant I wasted a little around the edges but it gave a lovely even finish. Yummy - will definately make again!

I'm glad I didn't read all the negative comments about the frosting; this recipe is lovely and the topping worked really well. Just make sure that all the marshmallow is stirred into the milk when it's still warm and keep an eye on it while it cools. You want to spread it when it's spreadable (not rocket science) and not cover with clingfilm (again not rocket science). As for the cake mix itself, it was dead easy, the only downside is that chopping cherries and marshmallows is a bit of a faf, but worth it as everyone who tried it thought it was delicious.

Had no problems with this recipe. Easy cake mix in one bowl-agree I would certainly add more cherries, or even coconut, just to vary the texture. I made frosting with pink marshmallows, put it onto a cold cake whilst still warm and it was fine. spread easy and set overnight. Like the idea of adding sprinkles, flowers etc

First time I made these cakes I put a glace icing on the top and they were very popular. This time I made the marshmallow topping. Nightmare to cut but warmed the knife and then much better. Very pleased with how they looked- then coved them in cling film :-((( they stuck to the cling film and came off. Had to make glace icing again!

I made these a couple of weeks ago and have to say I agree with some of the previous comments the cake mixture was nice but the marshmallow topping is impossible to work with! When you are spreading it on top of the cake it is pulling the cake mixture off and I too covered it with foil to keep fresh and this was a big mistake- the whole topping was pulled off along with the foil when we came to eat it! Tasted good but frustrating end result.

Strange recipe but the cake turned out fine and was delicious! Took note of the comments about the frosting so just used plain icing sugar to coat the top, followed by a drizzle of melted pink marshmallow (just load onto a teaspoon and make funky crisscross lines as it falls onto the cake). V easy and v effective!
