Ingredients

  • 1 pineapple, peeled, quartered and core removed
  • pomegranate seeds
  • coconut yoghurt or ice cream
  • dessicated coconut to garnish

Method

  • STEP 1
    Slice pineapple on a mandolin or on 2mm slicer of a food processor
  • STEP 2
    Arrange in concentric circles leaving a space in the centre
  • STEP 3
    Place a scoop of coconut yoghurt or ice cream in the centre
  • STEP 4
    sprinkle with dessicated coconut and sprinkle with pomegranate seeds
  • STEP 5
    chill until required
