Ingredients
- 1 pineapple, peeled, quartered and core removed
- pomegranate seeds
- coconut yoghurt or ice cream
- dessicated coconut to garnish
Method
- STEP 1Slice pineapple on a mandolin or on 2mm slicer of a food processor
- STEP 2Arrange in concentric circles leaving a space in the centre
- STEP 3Place a scoop of coconut yoghurt or ice cream in the centre
- STEP 4sprinkle with dessicated coconut and sprinkle with pomegranate seeds
- STEP 5chill until required
