  1. Heat oven to 200C/180C fan/ gas 6. Tip the oil into an ovenproof casserole dish. Add bacon and fry for 2 mins. Add the leeks and cook until soft, but not coloured, for about 4-5 mins. Tip in rice and cook for 1 min more. Pour over stock. Cover and place in the oven for 20 mins, stirring halfway.

  2. When rice is just tender and all liquid is absorbed, remove from oven and stir in peas. Place back in oven for 2 mins more. Remove and stir in cheese. Add zest and season.

This was very tasty and cooked in the time quoted. If I was making it again I would probably leave out the soft cheese and maybe just grate some parmesan into it.

Very tasty. I would highly recommend replacing approx. 250ml of stock with white wine. I also added a chopped clove of garlic, 2 chicken breasts and only added 2tbsp of cream cheese replacing the 3rd with grated Parmesan and extra for serving. A really simple, effective recipe.

This was so easy and really tasty! I made it for my boyfriend, who isn't the biggest fan of leeks or peas, and he really liked it! I made it with cheapy plain white rice, and it worked perfectly. I also used the juice of half a lemon instead of the zest, and the flavour carried really well through the dish. Will definitely be making this again!

I was apprehensive to bake the risotto but it turned out great! It definitely took more like 35-40 minutes in the oven but I did add courgette and green pepper instead of the leeks. The cream cheese gave it that lovely oozy texture without adding too many extra calories!

I made this and added some cooked sliced chicken breasts at the end. It served 3 big appetites and was easy, tasty and very much appreciated. My husband thought I had taken ages to make it. Result.

I had a day off work and promised my Girlfriend I would cook, about an hour before she came home I hadnt started anything. I found this recipe online looking for quick one pot recipes and cooked it for her. It was the first time I had attempted a Risotto and it turned out perfectly. I followed the recipe completely and I added some frozen prawns at the same time as the bacon. She said it was the best thing I had ever cooked. We will be having this again very soon.

We loved this! needed quick mid week meal and this was so easy!The lemon zest really lifted the meal. added sour cream that needed be used up that not the soft cheese. Sour cream added a lovely 'creaminess!' will def make again!
