  • 200ml hot low salt vegetable stock (from a cube is fine)

  • 2 tbsp toasted pine nuts

Method

  1. Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper, and dice the cucumber. Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

This is lovely; you can vary to ingredients to suit your own taste. My 3 year old grand-daughter would eat it every day if she could!

I had this with my tea and it was deliciouse, I used more feta, cherry tomatoes and sprinkled in some mint and tobasco, which I think lifted the dish and was so tasty(I only put 5 stars because there is always room to improve!!!)

Really great! I improvised and used other seeds instead of pine nuts and baked paprika I had leftover, but this is great for a healthy dinner or picnic

I couldn't believe how delicious this salad was when I first made it! It takes almost no effort at all and the result is fantastic. I made it for a birthday party and it went down so well.

The recipe is great. It tastes beautiful and really does only take 10 minutes. I will definitely be making this again.
