  • 4 boneless, skinless chicken breasts
  • 3 tbsp Homemade pesto (see the recipe in tip section below)

  1. Heat oven to 200C/fan 180C/gas 6. Use a small sharp knife to make a slit along the side of each chicken breast to form a pocket. Mix together the pesto and mascarpone, then carefully spoon a quarter of the mixture into each chicken breast and smooth over the opening to seal.

  2. Brush a little oil, about 1 tsp, all over each chicken breast and season well. Tip the breadcrumbs onto a large plate and season. Place each breast on the plate and press all over with the breadcrumbs. Place in a lightly oiled shallow baking dish along with the tomatoes (kept together on the vine in a couple of bunches). Drizzle over the remaining oil.

  3. Cook in the oven for 20-25 mins until the chicken starts to turn golden and is cooked through. Scatter over the pine nuts and cook for 2 mins more. Sprinkle with basil leaves and serve with new potatoes or crusty bread.

I didn't have mascarpone so used grated mozzarella instead which worked perfectly. I also toasted the breadcrumbs in the oven to make them crispier before coating the chicken, and added some parmesan cheese. Served with potato wedges......lovely!

Made this last week it was yummy and really easy to make. Made it tonight with a twist, used filo pastry instead of breadcrumbs and used sundried tomato pesto, it was also yummy, plates licked clean.

This was very easy to prepare (in advance) and really delicious! Substituted mascarpone for low fat cream cheese + greek yoghurt, and laid the breasts on some garlic as well. The breadcrumbs kept the meat very moist. Served with buttered leeks & carrots. Definitely making again.

Absolutely beautiful, the extra pesto and mascarpone mixture works wonderfully on top of a steak or a pizza!

I made this recipe for my boyfriend last night as part of a cosy quite night in. It was so simple to make and tasted amazing. He loved it too! Will certainly make this again.

I have made this so many times I have lost count. It always goes down a treat and great for dinner parties. I have also used parma ham on the odd occasion which tasted delicious. Once you have made your own pesto you will say goodbye to buying it!

Following advice from others I used Boursin light and shop bought pesto. Also added cherry tomatoes towards end of cooking rather than at start. Result 6 clean plates! Also so handy to prepare ahead- I did it when my little one was sleeping in the afternoon for that evenings dinner. Definitely make again!

Easy. Delicious. They always get top marks from family & friends. I wrap them in serrano ham instead of using breadcrumbs. Have also topped lean pork chops with the pesto mix then wrapped in ham with the same delicious result.

I love this recipe! I tried it out on my husband for dinner during the week and loved it so much I'm making it for a dinner party tonight. It's so simple and easy to make. I had extra pesto left over which I had with pasta the next day for lunch. Even the pesto recipe is so easily made I will never buy a jar of pesto again.
