Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 3 courgettes, quartered lengthways and cut into chunks
  • 2 x 400g cans chopped tomatoes
  • small bunch basil, torn
  • 25g Parmesan (or vegetarian alternative), finely grated

Method

  1. Heat the oil in a large frying pan over a medium heat. Add the onion and cook for about 10 mins until softened and starting to go golden brown. Add the garlic and cook for 5 mins more.
  2. Add the courgettes and cook for about 5 mins until starting to soften. Tip in the tomatoes and give everything a good stir. Simmer for 35-40 mins or until tomatoes are reduced and courgettes soft, then stir in the basil and Parmesan.

What a winner! Easy prep, looks like a whole other course but it's a 'side'!! Impressive.

I have been making this for a long time (without knowing it was Tomato & Courgette Stew) and I usually add some cooked Gnocchi (3 mins) to it, grate cheese over and brown under the grill - really tasty & quick! Have also added cooked chicken, prosciutto and small sausage meatballs - just throw in what you fancy at the time!

Very tasty and healthy dish. I served it with whole weat pasta, parmesan, freshly ground pepper and coarse sea salt sprinkled on top. Will sure make again!

I made this and served it with pasta. A low fat and low calorie dish, just the thing if you are trying to loose some weight!

Enjoyed this recipe but added a tin of kidney beans and teaspoon of chopped chilli to give it a bit more bite and spice it up a bit - worked well

I didn't have courgettes so I made with a medium eggplant... it was delicious (but I added a Tuscan season I had and a bit of red pepper)
