Ingredients

  • ½ cucumber, deseeded and cut into 1cm cubes
  • 20 cherry tomatoes, halved or quartered
  • 1 red, orange or yellow pepper, halved, deseeded and cut into 1cm cubes
  • 3 spring onions, halved lengthways and sliced
  • 1 lemon, zested and juiced
  • 20g mint, leaves picked and finely chopped
  • 20g basil, finely chopped
  • 2 tbsp extra virgin olive oil

Method

  • STEP 1

    Tip the cucumber, tomatoes, pepper, spring onions and lemon zest into a large salad bowl.

  • STEP 2

    Immediately before serving, stir in the herbs, olive oil and 2 tbsp of the lemon juice. Season to taste and toss everything together.
