UPDATE Have now made this several times, all recent efforts using quark, which is ultra low fat. Use low fat digestives and Pure as opposed to butter. Also use only 2 eggs and dont bother with extra yolk. This mix ALWAYS makes more than one cake. Last week I made using 1.5 most ingredients, so whole pack of digestives and sufficient fat to mix and was able to make 6 small cakes and 2 in 23cm tins. All took appx 30 mins to cook together in a fan oven and had very slight wobble. I call that good value. I find the small ones make good gifts. I use 2 packs of blueberries for all of them, some I mix in the fruit and some I leave it out, it all depends on what you want. I also just wash and place a few on top without using icing sugar. I personally do think that they are best next day after chilling and then eaten at room temp. I find it hard to believe that some people have called this over-rated it is seriously the best and easiest cheesecake I have ever made.

A very tasty and very easy summer cheesecake. My family likea thicker bace though so I added a few more biscuits and a buuter. As others have said it works well with other summer fruit or a combination of fruits.

Took this along to a friend's BBQ and was a hit with everybody. Very easy to make and definately faff free.

I made this for a family get together, received numerous compliments, used lots of fresh raspberries from my own garden. Very easy to make and well worth it.

Fabulous and utterly delicious cheesecake! This was the first cheesecake I have ever made and my husband said it was the best he had ever tasted. It was a huge hit at our dinner party and two guests asked for the recipe. I think the cake would be even better with a thicker biscuit base, and I'd also like to try some of the other fruit suggestions posted here.

This tasted amazing - my friends loved it - and it was so easy to make that I felt like I had cheated them! he he. Made it with frozen raspberries (defrosted a bit before adding them) and I used the leftover ones on top with the defrosted juice - instead of making the sauce. Will definately make again!

This was absolutely gorgeous and a resounding success. It was really easy to make and came out perfect. I had to leave it in the oven slightly longer as it was a touch wobbly but kept a close eye on it and it was fine. I didn't serve with the raspberry sauce as I made it for my boyfriend's family and had to carry it to their house, but would try this next time. Mine didn't crack either - maybe I had good luck! I will definitely make this again as my definitive cheesecake recipe! A hit!
