3 quick dinner ideas with chopped tomatoes

With just a can of chopped tomatoes, you can whip up three quick, easy dinners. From cod traybake to upgraded beans on toast, these meals pack a flavour punch.

A simple can of chopped tomatoes is all you need to transform a dish. We've devised three super simple and speedy ideas for tomato-based midweek meals – all involving just three other ingredients.

Serve up a simple fish supper in under half an hour with our tasty cod, olive & sundried tomato bake, topped with slices of crispy pancetta for extra flavour.

For something even quicker, make a posh version of beans on toast by combining chopped tomatoes and mixed beans. Serve on grilled sourdough and top with a sprinkling of crumbly feta cheese to make it extra special.

Finally, recreate a classic Italian dish with our simple cheat's aubergine Parmigiana by layering chopped tomatoes and melty buffalo mozzarella inside baked aubergines. Finish with a sprinkling of parmesan and pop them under the grill for a crispy golden topping.
