10 tips for next level chicken katsu curry

Take this family favourite to the next level with our pro tips. Make your chicken breasts more tender by batting them with a rolling pin. Thin, even chicken will be easier to coat in breadcrumbs and will look neater. Soak the chicken in milk for up to 24 hours to make it more succulent, and add togarashi spice mix to the flour coating to kick up the flavour.

Enhance the savoury flavours by adding Japanese soy sauce. Panko breadcrumbs keep the fried chicken extra crunchy, while using puréed vegetables in the sauce (in place of flour or cornflour, both of which can be gloopy) helps keep it smooth. Add some red or brown miso paste to the curry sauce for extra depth.

Blitz the sauce in a high-powered blender or smoothie maker, then pass it through a fine sieve for a velvety consistency. Serve with a simple shredded white cabbage and nori salad for a fresh side.
