Rice pudding with autumn berries with Alpro Almond Unsweetened drink

The subtle nutty taste of Alpro Almond Unsweetened drink brings together the flavours of this warming, light dessert

Serves 4 | Prep 5 mins | Cook 45 mins
  • 120g pudding rice
  • 800ml Alpro Almond Unsweetened drink
  • 3 tbsp maple syrup
  • 1 tsp vanilla paste
  • For the spiced berry compote

  • 200g autumn berries
  • 1 tbsp maple syrup
  • pinch of mixed spice
    METHOD
  • 1 Place the rice, Alpro Almond Unsweetened drink, maple syrup, vanilla and 200ml water in a large pan. Mix and cook gently over a low heat for around 45 mins, stirring regularly until you have a thick and creamy mixture.

  • 2 In a separate pan, combine the berries, maple syrup and mixed spice. Cook over a medium heat for 5 mins, until the fruit has softened and started to break down.

  • 3 Spoon the rice pudding into a serving dish. You can add a splash of Alpro Almond Unsweetened drink to loosen if needed. Top with the spiced berry compote.
