Spinach pancakesWith Alpro Oat Original drink

For a filling breakfast, try these appetising American-style pancakes made with spinach, egg and delicious, fibre-rich Alpro Oat Original drink

  • 200ml Alpro Oat Original
  • 100g spinach
  • 250g wholemeal flour
  • 1 tsp baking powder
  • 1 large egg
  • pinch of grated nutmeg
  • 1 tbsp sunflower oil
  • 4 tbsp Alpro Simply Plain, to serve
  • handful roasted cherry tomatoes, to serve
  • 2 tbsp toasted pumpkin seeds, to serve
    METHOD
  • 1 Heat oven to 160C/140C fan/gas 3. Add the Alpro Oat Original, spinach, flour and baking powder to a blender, crack in the egg and season. Sprinkle over a little nutmeg and whizz up into a smooth batter.

  • 2 Add the oil to the pan, pour in 3 tbsp of batter, cook for about 1 min until the pancake begins to bubble. Flip and cook on the other side. Keep warm in the oven while you cook the remaining pancakes.

  • 3 If you like, you can serve with a spoonful of Alpro Simply Plain, cherry tomatoes and a sprinkle of toasted pumpkin seeds.
