"As I don't eat beef but hubby does, was looking for a quick midweek meal for him that was healthy and where he could eat the rest the next day. I added some quick-cook egg noodles at the end and a few dried chili flakes... He absolutely loved it! this one's going in the regular recipes folder!"

Peach & almond muffins

"I made these last night after needing a recipe for muffins that a) were freezable, and b) would use-up almonds that I still had. After reading a few of the comments here, I used about 50g less sugar, I didn't add jam and I also didn't sprinkle any sugar on top of the muffins... and they're STILL SWEET ENOUGH. I think the original recipe is far too sweet and by using less sugar, you can probably make these even lighter and healthier. Instead of jam and peaches I mixed-in some dried cranberries (they also needed to be used) and they've turned out fabulously. I tripled the recipe to make 18: 3 of which my husband immediately devoured, 6 are being demolished by my colleagues in the office as we speak, and another 9 are sitting safely tucked-away in my freezer for future spontaneous afternoon-tea-guests. Great recipe, very quick to make and easy, but go easy on the sugar."

"Everyone loved this as it was refreshing and not too sweet... most of us even had 2 slices :-) Agree with others that it definitely needs a minimum of 45min out of the freezer before serving. Will be making this again!"

"Made this night to take to a friend's place for the weekend... didn't have lemon curd so I added a bit of honey instead (found the mix not quite sweet enough). The proof is in the eating... looking forward to having this for dessert tomorrow!"

"Hubby had two of these cooked from frozen for dinner... they cooked remarkably well and tasted just as great as when I had made them fresh. He has already asked me to make another batch!"
