"Sounds very similar to what I did a few days ago. Put smooth mustard, tabasco sauce, runny honey, juice from a lime, then the rest of the ime put into the marinade, whatever herbs and seasonings you like. Stirred it well, then added garlic cloves, quartered shallots, and a wedged apple. Pork steaks - left to marinade - turned them a few times. Then the whole dish into the preheated oven (gas 4) for maybe 20 minute., depending on how thick the steaks are."

Crisp chicken bites

"I frequently use the mini chicken breasts which are now much cheaper than full sized. Fill a zip lock bag with porridge oats, whatever seasonings you like (I use paprika, season all, whatever), also garlic cloves, a quartered or eighthed lime, and any other seasonings you fancy. Put in chilli or tabasco if you like the heat. Mustard or mustard seeds - just whatever. Wash your mini chicken breasts and give them a shake. Then drop them into the bag. Just keep working the mix around the contents. This can be left in the fridge, or cook fairly immediately. Cook either in a dish in thepreheated oven - gas 4 for about 20 to 30 minutes. Or dry fry. Serve with a salad of tomato, cucumber and spring onion with a dressing. And fried potato, or mash - or whatever you ancy - garlic bread is good too."

"Some of the comments about this recipe would make me want to make it as a drink. I used to do a tomato juice starter - finely diced spring onion, yellow peeper and cucumber,, and some seasonings - leave itto infuse in the fridge for as much of the day as possible. Nowadays, though I'm not making that juice as such, I do add lime juice and a load of garlic into my seasonings. "

"PS Sorry - I should have added this to the cheesy baked egg. Serve with salads, especially a tomato salad. Garlic bread is quicker and easier for me than pastry (even ready made). And the bread can go on the bottom shelf while the egg is cookng. Then vry near the end, they can be swapped round."

Smoky cheese & onion tart

"I make a version of this, but without the pastry. It's just basically a cheesy baked egg, and lovely with salads, garlic bread, whatever. The cheesy baked egg - beat your eggs (depends how many folk it's for), and in milk and/or some cream, and seasonings (eg coarse-grain mustard, maggi, some soft herby cream cheese if you have any in the fridge, maybe a dash of tabasco, and some garlic). Grate a load of cheddar or red leicester into a glass oven dish. Add any pre-cooked veg, like fired onion, peas, cooked finely diced peppers, whatever. Beat the egg mnix again, then pour over the cheese and veg. Put into a preheated oven (Gas 4) until the centre is nearly set. Then, if you want extra cheese, grate or slice it ovr the top and return to the oven till the centre is set."
