"This is a great dish, I return to it time and time again as it's always well behaved. I have also done it with success in a slow cooker by searing first then putting on a bed of fried-off veg and it was done to a turn in 6 hours... But then I do suspect my crock pot is a little bit fierce..."

"Crumbled feta over and used tinned tomatoes to fine effect. Don't really believe in peeling tomatoes but it turned out OK! Used as part of Greek supper spread alongside a spanakopita."

Winter minestrone with pesto croûtes

"This is a real winner, but it's the pesto croutes that are the star! People may very soon get sick of me putting them on everything I cook. Left out the potato and put wholewheat spaghetti in instead, then reheated the next day and slung in some fried leeks and butterbeans. Just fab - you could go on tweaking this recipe forever."

"A favourite as part of a mezze meal; after a bit of experimenting I tend now to chop the walnuts up finely and add to the breadcrumbs to make a super nutty crust, works quite well. Agree with those above, you need a heavy hand with slapping on the houmous!"

"Smashing! As it was just past Easter and I had a few bits of chocolate left over I cut up chunks and put them in the middle layer too, which was fab... 'Cause clearly what this recipe needed was a little bit more sin..."
