"I've made these as stated in the recipe but they taste much better with fresh raspberries and even chopped tinned peaches. They rise fantastically and can easily be made gluten free by changing they flour to a gluten free one."

"Excellent carrot cake recipe, I've made 2 already this week! I prefer it with a cream cheese and citrus icing on the top spread in a nice thick layer. Yum!"

"Not rating this recipe yet as its still baking in the oven! But it smells delicious. I used blueberries, cherries, cranberries, golden sultanas, raisins, in fact anything I could get my hands on in the cupboards. The dried fruits are so easy to find in any supermarket, I quite like Aldi's. I also added a sprinkle of mixed spice and a splash of dark rum in it just to be decadent, I'll let you know how it tastes once its finished cooking!!"
