Rhubarb & custard cake

"Love this. The all in one method of the cake mix turned out surprisingly well. I also had to cook the cake for longer by 20 minutes though. The only thing I'd change would be to be cut the rhubarb into smaller pieces before cooking because it was difficult to cut up after roasting and I think smaller pieces work in the cake."

Bubble & squeak cakes

"I used cabbage instead of sprouts and they were delicious (perfectly good after freezing also). I especially like them topped with wilted spinach and a poached egg. Absolutely delicious."

"Absolutely delicious and so easy AND healthy! I think warm it would make a great side dish to a tomato based curry however I also love it on its own as a vegetarian dish. Additionally I think its scrummy cold the next day for lunch (but not straight from the fridge of course!)"

Mushroom & rice one-pot

"I made this tonight and I can't say I was too impressed. I tried it on it's own and it was a bit bland so I sprinkled some cheese on top and that lifted it a little. I certainly wouldn't turn down a bowl of it if offered but I don't think I'll be making it again personally."

"Have loads of courgettes in the garden at the moment so looking for different ways to use them up. Really loved this salad, it was really moreish and if I'd made more I would have gone back for seconds. Wouldn't make any changes."
