A risotto for early summer

"Fabulous! I added frozen broad beans and used frozen peas instead of fresh, and also added a courgette cut into small chunks. Took a lot longer to cook than expected, but the effort was well worth it! Particularly good with a large glass of dry white wine alongside... The flavour and texture of the rocket really complimented this dish. I shall be making this again!"

"This is a really fantastic meal - full of delicious flavours, textures, and no meat! It's also a nice quick easy dish to throw together with what you have lying around, and economical too! Very popular in my house."

Dairy Free Choc Chip Cookies

"I made these cookies today with my five-year-old Niece. She is allergic to milk, so it's not always easy to bake yummy things, but these were absolutely delicious! Very easy recipe, she had lots of fun mixing everything together (and licking the bowl afterwards of course!). They needed a little longer than stated, about 20 mins, but they were fantastic. I also used Vitalite which gave them a lovely flavour. Thanks for this recipe, I'll be making these again and again!"

Malt chocolate cheesecake

"This cheesecake is absolutely gorgeous! Really easy to make, yet looked very impressive. I followed recipe with no tweaking and it couldn't have turned out better! Everyone who tried it loved it, served for pudding after dinner for friends. I will definitely be making this again, and again!"

"This is lovely. I didn't use lemon topping as didn't need it. I mixed half the pecans into the mix and sprinkled the other half on top before baking for a crunchy topping. Yum! Makes a lovely breakfast or snack to take to work."
