Coconut carrot slices

"Made this today for the first time as a change to my usual Carrot, Ginger & Orange Cake recipe - I am a very very experienced cook - followed the recipe to the letter and it was an unmitigating disaster - my husband said it was the worst cake I've ever made (and he taste tests everything I make!!) - despite giving it 45mins in the oven BEFORE I put the coconut topping on & then giving it another 10mins for the topping although a skewer when inserted came out clean once cold the cake was a heavy stodgy mess!!! Not at all the fabulously light cake shown in the photo!! I note from the other comments that 30mins seems to be nowhere enough cooking time for this cake so will try it again and give it the 50mins that another tester gave it & see if it makes a difference if not I will be going back to my fail safe recipe I've been using for years!!"

"This was a fabulous recipe as a seasoned cook & maker of celebration cakes I found the recipe easy & adapted the fruit as my sister hates mixed peel!! It froze beautifully & looked stunning put out for tea on Boxing Day and tasted divine. What was left kept really well in an air tight tin too. Definitely on the list for next Christmas!"

"Really easy dish to prepare and freezes beautifully and big advantage that you can reheat it gently from frozen so you don't have to remember to take it out of the freezer hours beforehand! Not only good at Christmas with turkey but we love it with sausages and especially toad-in-the-hole."

Gingery Christmas cake

"I make a christmas cake every year but have always stuck to a tried and tested recipe handed down from my late mother. When I saw this recipe in the Good Food Magazine as we are all ginger lovers I decided to try something different this year. Instead of using Just the raisins, currants & sultanas, I made up the same weight of fruit with a mix of large golden raisins, stoned raisins, sultanas, glace fruit & cherries. What a hit! Everybody loved it! My husband so much so that he's asked if I'd make it again without the marzipan and icing as a fruit cake for his lunchbox!"
