"Made this tonight, turned out to be an absolutely stunning recipe. Found the timings didn't need to be quite so extensive; rather than the initial two hours, the meat was tender and the wine stock reduced more than enough within an hour and a quarter. Found that the stock as explained in the recipe was too wine-ee (although that may have had something to do with using Chianti) so added a beef stock cube to the mix along with salt and pepper to taste - really perked up the flavour. Served it up in single le creuset pots on a plate with homemade oven cooked rosemary chips and al dente boiled carrots. It's also worth noting that the servings for this recipe is more suited to two than to four. Would more than recommend!"
