"Don't be put off by the blue icing. The basic cupcake recipe is so easy and delicious. I have made these many times and they have always turned out beautifully. Have also tried omitting the lemon and adding 1tsp vanilla extract to make vanilla cupcakes. Haven't made the blue icing, nicer to do your own buttercream or basic icing sugar with a bit of lemon juice. "

"Absolutely delicious and so easy. I substituted leeks instead of onion and added some mushrooms. Will definitely make this again, such a good way to use up left over roast chicken."

"Made mine in a loaf tin. Took out after 25 mins and put it back in the oven on its side for another 10 mins which made the sides and base nice and crisp. Lovely recipe, first time I've made bread but will now make it regularly. I'm going to experiment with flour mixes and seeds next time."
