Roast summer vegetables & chickpeas

"I am making this for the second time tonight, because it is GORGEOUS. My BF wasn't too happy about the lack of meat last time, but even he loved it. I enjoyed it reheated the next day for lunch too. I used ground coriander as I didn't have any coriander seeds and added two tins of chopped tomatoes to give it more sauce. Served it with couscous flavoured with lime,coriander and toasted cashews - delicious!!"

"Made this for dinner last night and it was absolutely delicious. I used Tikka Paste and baked the chicken in the oven. The chicken was so moist. Will definitely be a regular dinner in our house!"

"I baked this with the walnuts but without the pineapple (as I didn't have any). Like others on here, I found that the cooking time had to be extended to 2 hours! Which I've never had to do with my oven. The result was delicious, but unfortunately the Cream Cheese Frosting just tasted like cream cheese! Will try using more icing sugar next time or maybe buttercream as per a previous comment."
