"I made this for the first time last week for a midweek supper and it was a huge success. My (very fussy) husband loved it. I bought a packet of baby spinach and steamed it till it wilted then added it to the filling mixture when adding the flaked fish. I think it made the dish. Many similar recipes include spinach. I'm making this again tonight. This time I don't think I'll bother with the souffle part and will just omit the egg whites. It didn't actually work for me all that well last time but probably because I didn't have any individual gratin dishes and was cooking two pancakes in one larger dish, which should've been baked longer"
