    Pan-fried salmon with watercress, polenta croutons & capers

    "This and the accompanying new potatoes with cornichons and cream make an incredibly easy, tasty and, surprisingly impressive in its simplicity, main course for a dinner party. I jettisoned the polenta croutons as they were completely tasteless and I didn't feel they added anything to the whole - the garden birds enjoyed them anyway!"

    Leek & mustard vinaigrette with Carmarthen ham

    "The leek and mustard vinaigrette was very straightforward and absolutely delicious. Unfortunately I couldn't find the ham or cheese, but used serrano ham and didn't use a cheese as I don't particularly like mozzarella and I think the vinaigrette would drown it. I will certainly do the vinaigrette again as I can think of all sorts of things it would fit very well with for a starter."

    "I used a 23cm flan tin, but don't think it was deep enough as I had enough cooked pastry left over the side of the tin to offer the garden birds a treat (they didn't say 'no'!) and too much lemon mixture, so I would try to find a deeper dish next time. This was not the easiest recipe and, to my cost I found out, it is necessary to really read and digest the different components before starting on each. However, at the end of the day you have a really professional-looking and truly scrumptious dessert. I will certainly be doing this again!"

    "Really lovely, but needed longer out of the freezer than the recipe says. There wasn't a great deal left over after a dessert for 6, but what was left my son ate from the fridge over the next 2 days and said it improved with time!! I'd definitely do this again"
